Ultimate Rosted Chicken

You will be surprised at how easy this recipe is, all you need is to prepare the chicken and let oven do the work while you play with your kids or entertain your guests.




Ingredients:


  • Whole chicken

  • Lemon

  • Onion

  • Dried mint

  • Oregano

  • Sumac

  • Black pepper

  • Sea salt

  • 3 crushed garlic

  • Carrots and zucchini ( you can substitute with other vegetables that you prefer)


Instructions :


  • Preheat the oven to 200 degrees Celsius

  • Clean the chicken from the inside

  • In hot water put half an onion and half a lemon until it is hot then stuff it inside the chicken

  • Keep the chicken nice and dry from the outside by using a paper towel

  • In a bowl mix the spices, dry herbs and crushed garlic with olive oil

  • Try to expand the skin from the breasts side, you will have a left side and a right side to stuff the spices under the skin

  • when you are ready stuff the spices under the chickens skin on both sides and use the rest of the spices to massage the chicken from top to bottom. Keep some of the spices mixture for the vegetables

  • On each side of the chicken breasts put a spoon of room temperature butter under the skin with the the other spices to keep the chicken moist.

  • Now the chicken is ready for the oven put it in a baking try with the vegetables of your choice to roast together. Make sure to season the vegetables with the spices mixture.

  • Personally I like to sprinkle some sea salt on top of the chicken and a light squeeze of lemon juice.

  • Bake the chicken for an hour

  • Enjoy



Recommendation :

There are many ways you can have a different flavored chicken roast by changing the spices. You can use dry herbs or fresh herbs like parsley or rosemary.

It is up to your personal preferences.

But do note the importance of stuffing the inside of the chicken with hot lemon or onion to help cook the chicken from the inside. The butter and olive oil is the best of both worlds to keep your chicken moist.
