Chicken Fajita with homemade salsa

Spice up your dinner with this easy Mexican fajita chicken recipe, the secret for a delicious fajita is the marinate and a great salsa on the side.



Ingredients:

  • chicken breasts cut to strips

  • one lemon or lime

  • red or green peppers or both cut to thin slices

  • sliced onion

  • tortilla for serving

  • olive oil for marinate

Spices:

  • oregano

  • chili pepper powder

  • cumin

  • black pepper and salt

  • paprika

  • garlic powder

(below is the ingredients and instructions for salsa)




Instructions:

  • Start by marinating the chicken in the juice of one whole lime or lemon, drizzle of olive oil, spices. let it marinate for at least 30 minutes or overnight in the fridge.

  • heat the pan that is coated with cooking oil then add the marinated chicken. (don't move the chicken at first let it cook to get a nice color before flipping to the other side).

  • flip the chicken to cook the other side until the chicken is cooked through.

  • Remove the chicken from the pan then add the onion and the green peppers and cook it for few minutes add the spices to build the flavor.

  • cook the chicken again with the peppers and the onions one more time to heat the chicken before serving. enjoy.

Recommendations:

the fajita can be served with tortilla bread, shredded cheese, tomato for toppings but my favorite is guacamole, pico de gallo or home made Mexican salsa. below is the recipe for the salsa.


Mexican Salsa:



The salsa consist of fresh ingredients and roasted ingredients to give the smokey flavor. you can control the amount of hot pepper you add to your liking.

Ingredients:

  • 4 rip whole tomato's for roasting

  • 2 finely chopped tomatoes

  • 2 finely chopped garlic

  • one red onion finely diced

  • one fresh hot green pepper if you prefer hot salsa or Jalapeno if you prefer mild hot salsa

  • dried hot peppers

  • coriander finely chopped

  • garlic powder

  • salt to taste

instructions:

  • Mix the diced tomato, onions, fresh peppers, coriander, garlic and set it aside.

  • Roast the tomato's in a pan when it start to roast turn it over and roast the other side, it only takes a few minutes.

  • put about 3 or four dried peppers in the pan, and be careful not to burn them because it can only less then a minute.

  • Put only the roasted tomato and dried peppers in the food processor and blend them.

  • Add the roasted ingredients to the fresh ingredients mix and serve.

  • enjoy.
