Creamy Mashroom Chicken Pesto Pasta

If you choose to cook chicken with the pasta, first marinate the chicken with the spices, olive oil, chili pepper and vinegar. chicken or with a mushrooms alone. Not your typical Italian dish but definitely a homemade pesto sauce recipe is what makes it yummy. This is a delicious dish and a crowd-pleaser.



Ingredients :

  • Chicken breasts (optional)

  • Can of mushrooms or fresh

  • 1/3 cup of cream

  • 1/4 cup of pin nuts

  • 1/4 cup of grated Parmesan cheese

  • Two batch's of basil

  • 1 garlic cloves

  • 4 table spoons Good quality olive oil

  • 2 table spoons of butter

  • 2 spoons of white vinegar


Spices:

Salt and black pepper

Chile pepper

Vegetable cub stock

Chicken mixed spices


Instructions



  • If you choose to cook chicken with the pasta, first marinate the chicken with the spices, olive oil, chile pepper and vinegar.

  • In a cutting bored line a plastic wrap on the bottom and put the chicken on the top then cover it again with plastic wrap. Bang the chicken until it is quite flat and absorb all the flavors from the spices.

  • Let it marinate for at least 30 minutes if you want more flavor or you can start cooking the chicken right away.

  • Prepare your pesto first put the basil, Parmesan, garlic, pine nuts and salt in the food processor.



Keep it mixing while drizzling the olive oil. Now your pesto is ready.

Cook the chicken in a slightly oily pan, turn it over until it is cooked on both sides then remove from the pan (if you choose not to do the chicken skip this part).



  • Cook your favorite pasta as it is instructed in the box

  • In the same pan cook the mushrooms and add the butter. (don't over crowed the mushrooms in the pan when it is nice and brown add the seasonings and the vegetable stock cube.



  • Add the cream and lower the heat at this point.

  • Add half a cup of the pesto with the sauce and let it simmer for a minute before mixing it with cooked pasta then serve it with the chicken, enjoy.
