I tried a lot of carrot cake recipes but at last I sticked with the one that I loved the most.
Ingredients :
2 cups of flour
1 and 3/4 cup of sugar
3/4 of a cup of oil
3 eggs
2 cups of finely shredded carrots
1 cup of pineapple can chopped finely
2 table spoons of cinnamon
1 table spoon of baking powder
1 table spoon of baking soda
Pinch of salt
Optional
1/4 cup of walnuts dusted with flour
Instructions :
Preheat the oven to 180 C°
Shift the flour and baking powder and baking soda and salt and cinnamon together.
In another bowl mix the sugar and eggs and oil together very well then add the sifted flour in portions to the mixture till it is well corporated.
Add the shredded carrots and pineapple and mix again.
Prepare the cake pan with oil and dusted with flour before pouring the mixture.
Bake the cake in the oven for about 40 to 45 minutes until it is ready.
You can serve the cake with cream Cheese frosting on top.
