Carrot and pineapple cake


I tried a lot of carrot cake recipes but at last I sticked with the one that I loved the most.


Ingredients :

  • 2 cups of flour

  • 1 and 3/4 cup of sugar

  • 3/4 of a cup of oil

  • 3 eggs

  • 2 cups of finely shredded carrots

  • 1 cup of pineapple can chopped finely

  • 2 table spoons of cinnamon

  • 1 table spoon of baking powder

  • 1 table spoon of baking soda

  • Pinch of salt


Optional

  • 1/4 cup of walnuts dusted with flour


Instructions :

  • Preheat the oven to 180 C°

  • Shift the flour and baking powder and baking soda and salt and cinnamon together.

  • In another bowl mix the sugar and eggs and oil together very well then add the sifted flour in portions to the mixture till it is well corporated.

  • Add the shredded carrots and pineapple and mix again.

  • Prepare the cake pan with oil and dusted with flour before pouring the mixture.

  • Bake the cake in the oven for about 40 to 45 minutes until it is ready.

  • You can serve the cake with cream Cheese frosting on top.
